It did not get widely into Czech cuisine yet, and most of the people it associate it with drastic reduction diet. That is a big mistake. Growing celery and celery root. Important is the preparation of seedlings

Celery has a relatively long growing season, so if you are planning to plant seedlings, it is important to grow them in right time. How to do it? Plant the seedlings of celery or celery root in February or April. Keep the celery seeds in the temperature between 15-20 ° C, it is the only way, how they will germinate. Take careful care about the seedlings after they germinate, because celery seedlings are very fragile and sensitive and they can very easily dry out. Plant the seedlings so that they have enough space and let it strengthen. Transplant healthy seedlings with leaves gradually into pots and keep them on spot with plenty of light and temperature at least 10 ° C. Pre-cultivated the celery seedlings is somewhat complicated. If you are still not comfortable with it, or simply do not have time for it, we recommend you to buy already grown seedlings. However, be careful when you are buying them, buy only those, which look good, and have healthy roots.

Celery requires plenty of space and quality nutrients

The ideal time for planting celery is the second half of May. However, if you have a hotbed with warm soil, you can plant in April. Ensure that the celery is before planting hardy by ventilating and cut one third of the roots. Especially if you are planting celery root, be careful and give every individual seedlings enough space and rich soil. Suitable distance for celeriac is about 50 cm in the row and between them. Only then will be the celery root really large and intact. Celery then requires a slightly shorter distance, it will be fine with 20 cm. Immediately after planting, do not forget to give celery enough water. You cannot go wrong if you cover the patch with non-woven fabric.

Celery and celery root is quite demanding in nutrients and lime content in the soil. Especially celery, which forms larger amounts of green material, requires a large amount of nitrogen in the soil. During vegetation, we recommend to fertilize heavily the celery with compound fertilizer. Do not forget regular hoeing, especially with celery root. It is very important that they roots will have sufficient amount of air. What kind of soil is suitable for celery? Celeriac thrives in clayish, and humus soils and celery needs rather sandy-loamy soil.

Was the cultivation of celery successful? You can find out already in July

You can enjoy the first growing success in the form of small celery tubers already during the July. Also celery begins to ripen in the summer, but a one-time harvest will come at the end of September. When harvesting celery root be careful not to disturb the roots. You can keep healthy, clean, and not desiccated roots in the cellar without any problem for half a year.

Celery root fries


  • 1 to 2 large celery root
  • 3 to 4 tablespoons of oil
  • 1 tablespoon of curry powder

Celery fries - preparation process

Clean, wash and cut celery root into regular fries, thick about 1.5 cm. Toss them into the boiling, salted water, let it boil for 1-2 minutes and then sieve it. Add oil, spices to taste and mix well. Spread thus flavoured celeriac chips over the baking sheet and bake until golden brown at 220 ° C for about 35 minutes. Serve celery root fries as a side dish to meat, or as a hearty and healthy substitute to potato chips. For example, we can serve them with sour cream dip.

  • 1 large celery root
  • 1 carrot
  • 150 g of soft salami (it can be omitted)
  • Sour cream
  • Mayonnaise
  • Salt and pepper

Celery root spread - preparation process

Clean celery root and carrots and chop finely. Grate soft salami on a coarse grater and add to vegetables. Mix it all together with mayonnaise and sour cream and season as desired. For a healthier option, we can replace mayonnaise with yoghurt. You can add into this spread arbitrarily other ingredients, such as grated cheese or pickled cucumbers. Serve chilled ideally the next day.

  • 1 celery root
  • Salt
  • Vinegar (or lemon juice)
  • Flour
  • Breadcrumbs
  • Beaten egg

Fried celery - preparation process

Cut washed and peeled celery into slices about 4 cm wide. Cook them in the boiling and salted water for about 5 minutes. Wash cooked slices of celery with cold water and drain it. You can rub for better taste one side of celery with cream cheese, or you can put between two slices of celery a slice of hard cheese. Wrap thus prepared celery in flour, egg, and breadcrumbs. Repeat as needed. Fry wrapped celery until golden brown in hot oil. Serve immediately with potatoes, mashed potatoes, or vegetable garnish.
